After years spent in fast-paced tech careers — constantly glued to their screens — they found themselves yearning for a place to disconnect to reconnect. Their vision was shaped by two complementary backgrounds. Tourkomanis grew up in Athens, where his home was a constant whirlwind of family hosting friends — a love for authentic Greek hospitality was woven into his upbringing. Low is Singaporean, studied tourism as Marina Bay Sands was coming to life, and became a committed sustainability advocate, going on to helm a non-profit focused on haze pollution prevention. Together, they shared the belief that tourism and hospitality, done right, can conserve what is precious. Equipped with a deep understanding of what heartfelt hospitality looks like — shaped by hundreds of Airbnb stays rich in personal recommendations and human connection — they set out to create a place where locals and global visitors could gather and experience authentic Cretan hospitality while immersed in the landscape. The former olive grove where Tella Thera now stands was the first site they visited. On arrival, the owner's free-roaming white horse, Artemis, galloped up to them unprompted, as if welcoming them in. Despite extensive time exploring the Kissamos coastline, nowhere topped it. After nine months getting to know its third-generation farmer owners over taverna suppers, the sale was secured. The year-and-a-half build began in February 2024, with preservation of the grove's original olive trees paramount throughout. Since starting the project, Tourkomanis and Low relocated from Singapore to Kissamos and are now embedded in the local community. The low-waste foundations of the restaurant were built by zero-waste chef consultant Maurice Mc Geehan (known as @thenowastechef), who advised on equipment choices — including a charcoal grill and fermentation buckets — and techniques such as pickling, fermentation, and creating powders from leftover ingredients.
